Black Bean Chili

preheat oven to 350 degrees


1 large onion, diced

1 lb mushrooms

2.5 tbs olive oil

1 tsp cumin

2 tsp corriander

1 tsp yellow mustard seed (optional)

2 tbs dark red chili powder

2 chipotle chilis, minced

2 veggie stock cubes (

5 cups purfied water

1/2 c freeze dried red bell peppers

1/2 c freeze dried green bell peppers

1 lb (2.5 c) dry black beans, rinsed

2 tbs plus 1 tsp kosher salt

2 15oz cans diced tomatoes & juice


  1. In large dutch oven with tight fitting lid add mushrooms, and 1 tsp salt, stir cook covred over medium high heat 10 minutes, stir, cook 5 minutes more.
  2. Remove lid, stir until all liquid has evaporated then add oil and onions, cook 5 minutes. Add garlic.
  3. Add spiced and chilis, cook 2 minutes then add stock cubes, water and bell peppers and remaining salt.
  4. Add beans, stir well place in oven covered and cook one hour., add tomatoes, stir nad cook another 1 hour 20 minutes.
